My friend, Donna, is one of the most health conscientious people I know. She taught me about the importance of choosing organic, non-GMO foods whenever possible. Here is her recipe for the delicious, gluten-free sweet potato pancakes that she makes for her family.
Donna’s Sweet Potato Pancakes
Makes 7 to 8 pancakes
-2 cups of grated (on the smallest grate of a cheese grater) organic jewel yams
-2 tsp organic coconut flour (such as Bob’s Red Mill)
-1 tsp organic cinnamon (more or less depending on how much you like cinnamon)
-1/4 tsp sea salt
-3 organic pastured eggs (Vital Farms is one brand, or you can check your local farmer’s market)
-real organic maple syrup, for topping pancakes
1. Mix all ingredients, except maple syrup, together until uniform.
2. Fry on medium (about number 4 on your stove top dial) in organic coconut oil for about 90 seconds on each side (depending on how thick) or until the inside is light orange instead of pink.
3. Top with real maple syrup, fruit and/or your favorite healthy toppings.
