Our daughter loves pureed beans, and she won’t eat zucchini or squash unless it’s pureed. This is a great way to get protein and veggies into your picky toddler!
Bean and Vegetable Spread
Serves 1 toddler
-1/4 C organic garbanzo beans or cannellini beans (cooked with a little bit of salt)
-1/4 C organic, chopped zucchini and yellow squash
-1-2 tsp organic extra virgin olive oil
-water, for blending (if needed)
-a few squeezes of organic lemon juice (optional)
-organic garlic powder and turmeric OR organic chili powder and cumin, to taste
-1 tsp nutritional yeast
-a sprinkle of salt or dulse flakes (optional)
-cooked pasta or tortilla (gluten-free, if you’d like)
1. Blend beans, zucchini, squash, olive oil, water and lemon juice in a food processor until creamy.
2. Mix in spices, nutritional yeast, and salt or dulse.
3. Store covered in refrigerator until ready to use.
4. Mix with pasta or spoon over tortilla pieces. Many toddlers love to do their own dipping!
