Fudgy Black Bean Brownies

These are fudgy, chocolatey and wonderful . . . and filled with nutritious ingredients! I did not devise this recipe; I found it on Chocolate-Covered Katie’s blog. I made them using the substitutions she mentioned, and they were delicious! Even my non-vegan friends and family enjoyed them. I hope you do, too!

Fudgy Black Bean Brownies

Makes 12 brownies


-1 1/2 cups black beans (1 15-oz can, drained and rinsed very well)
-2 tbsp cocoa powder
-1/2 cup gluten-free rolled oats
-1/4 tsp salt
-1/2 cup pure maple syrup
-1/4 cup peanut butter
-2 tsp vanilla extract
-1/2 tsp baking powder
-1/2 cup to 2/3 cup chocolate chips


1. Preheat oven to 350 F.
2. Combine all ingredients except chips in a food processor, and blend until completely smooth.
3. Stir in the chips.
4. Grease an 8 x 8 glass baking dish with oil. Pour mixture into baking dish.
5. Cook the black bean brownies for about 18 minutes, then let cool at least 10 minutes before trying to cut.
