The oats in this recipe are naturally sweet from the banana. You could also add some date paste or pure maple syrup if you’re still adjusting to a reduced-sugar lifestyle.
Creamy Banana Oatmeal
2/3 C rolled oats
1 C water
a few dashes salt
2/3 C almond milk
ceylon cinnamon, to taste
1 banana, thinly sliced
for the adult bowl: 1 T flaxseed meal, 2 T mixed nuts and seeds, mixed fruit/berries
for 1 toddler-sized bowl: 1-2 tsp flaxseed meal, 1-2 T crumbled nuts and seeds, mixed fruit/berries
1. Heat the oats, water and salt over high heat just until the water starts to boil.
2. Lower the heat to low or medium low, and add the milk, banana and cinnamon.
3. Stir the mixture until it reaches your desired consistency. I use a whipping motion to really break down the banana and make the oats nice and creamy.
4. Mix flaxseed meal into oatmeal. Top with crumbled nuts and seeds and fruit/berries of your choosing.
