This breakfast has great texture and keeps me full for hours!
Crunchy Buckwheat Overnight Oats
-1/2 – 1 mashed banana, depending on how sweet you want your oats
-1/3 C rolled oats
-1 T hempseeds
-1 T pumpkin seeds
-organic ceylon cinnamon, to taste
-homemade almond milk, to cover oat mixture
-in a separate container, soak 1/4 cup buckwheat groats in 3/4 C water overnight
1. Mix the mashed banana, oats, seeds, cinnamon, and milk in a glass container, cover, and let sit in the fridge overnight.
2. In a separate container, combine the buckwheat groats and water, cover, and let sit on the counter overnight.
3. In the morning, rinse the groats very well. Sprinkle on top of the oats with the berries.
